Notes

Good Things Pressed is timely as we all must acknowledge the goodness that comes from being under pressure as so many of our favorite things are. From diamonds to wine. Using Pressure as a curatorial means to display the local food and culture as central  to this community cafe and bookstore will revitalize it and give it focus and purpose. This beautiful building can become the destination it deserves.

The food and menu should be simple, direct and delicious. A Bottega Culturale.  Panini, coffee and juice. Healthy wholesome ingredients that stand up as the best available and tried and true flavor combinations with a touch of unique flair. Things like a gluten free signature Pressed Arancini toasts topped with chutney. Fried olives, bruschetta where the simple taste of garlic, fine oil and basil carry the flavor into the memory and a desire for more. Real Roman coffee and a commitment to no trash.
sounds aspirational but should be tried out as a preferable no guilt supper yummy hot coffee. Let it by why people come to us.

Coffee shops average sales of 230 cups a day. That equals an estimated annual revenue of $250,000 in coffee. Add lunch, add happy hour, wine and hard cider, add community center and tourist destination. Add style, design, flair and a compelling story, Great hard to find gifts...A brand that is interesting and replaceable.

Delicious simple food, pressed juices, cider, wine and gift shop for a target revenue of 2.5 million.
Developing custom product, strong branding for potential franchise. A story to bring in the Press
to cover the Press so to speak also easier with a strong concept, powerful story and unique focus.

Serving the community by sharing things made under pressure with displays and engagement days
also wonderful way to get people in and give them a memorable experience.

Daisy Carlson I had a wholesale line and store for 17 years. Daisy Arts successful product line sold at Barneys, Bergdorf Goodman, Neiman Marcus and Saks and 2500 other stores.  I took a break have been mulling the idea of Good Things Pressed for sometime but don't have the restaurant experience.
I have the time, the drive, the interest and the design sense. The store I have been consulting for in Paris just opened their second location and is written up on a regular basis. I know retail, I know brand, I know design and marketing just not how to make 400 cappucccino's a day and consistent sandwhiches. I managed an International company and  staff as CEO of Daisy Arts from 1990 to 2007. Since I have been a design and marketing consultant.  I am culturally and linguistically fluent in Italian. I did a successful pop up shop at Throckmorton theater that was well received by the community and profitable. It was a test of a business model that we replicated in Paris. At that time I was not ready to go back to retail jail. The Depot is more open, bigger and has more potential.

The Italian Library Bookshelf. I already own four large 4 x 8 Italian library shelves that are fabulous to warm up the space and provide ambiance to a shop. I would be willing to test the retail on just those four shelves to show you what kind of numbers are possible.

I have some design ideas and ways to increase the restaurant area so the book shop surround it.

Special events from seasonal apple and tomato pressing, flower pressing could be explored. Local vendors providing Barrel wines and oils, Letter Press demonstrations. Lots of fun can be had.
